Flavia and Nana´s Plum Dumplings

I truly believe that no food, no matter how many Michelin stars on it, quite compares to our grandmas´ recipes. So when my best friend, Flavia, discovered her grandmother Nana´s plum dumpling recipe, written on a yellowing piece of paper in the back of her recipe book, we decided she just had to try it out and if we were going to be happy with the result, we´d share it with you. Flavia slightly tweaked the recipe and as such we can no longer call it Nana´s Plum Dumplings. It has become, even if she´s no longer here to taste it, Flavia and Nana´s Plum Dumplings recipe. And while we´re quite big in Romania on plum dumplings (my Instagram is full of them lately!) – these are no doubt, the best I have ever had. My friend Flavia is a master baker and runs a super colourful food account with her friend Sabina where she also posted the recipe in Romanian there, find them on Instagram at @povesti.aromate . So without further ado, this #homemadeMonday ´s #guestchefseries brings you the most phenomenal Romanian dessert of all.

Ingredients
(for 15 pieces)


15 medium prunes
800g potatoes
250g flour
2 eggs
2 tbsp salt
250g panko
100g butter
150g brown sugar

Instructions

1. Peel the potatoes and boil them in water with a bit of salt, until you can easily poke them with a fork. Let them cool and mash them into a paste.

2. Add the eggs, a pinch of salt and half of the flour to the potatoes and knead everything until you achieve a dough. Gradually add the rest of the flour afterwards until you´ve reached a homogeneous, yet sticky composition.

3. Slice the plums open on one side to remove the seed and add a teaspoon of brown sugar to their insides.

4. Take a little bit of dough, flatten it, add the plum on top and wrap the dough around it, such as to have it completely covered. Repeat with all plums and lay them on a tray covered in flour, so they don´t stick.

5. In a big pot, bring water and a teaspoon of salt to a boil.

6. As the water starts boiling, add the dumplings to it and let boil for 15 minutes. Note: do not add them all at once, as they´ll need space to not stick to one another.

7. Melt the butter in a pan. Add the panko and the brown sugar and fry until slightly golden.

8. Once the dumplings are done boiling, run them through the panko and brown sugar mix and use the remaining of it to serve. If you´re a cinnamon fan, add some cinnamon to it too!
