An American Christmas Cookie Recipe

Years ago, my friend Will shared with me a cookie recipe that, coming Christmas, I have done over and over again (just last week I did three rounds of it). Will got this recipe from Carol, one of his friends´ mom and I think I would kiss her if I ever met her. As someone that sucks at baking sweets, I am just so grateful that this recipe has few ingredients, is ready in 10 minutes and there´s pretty much nothing (except for overbaking) that you can do to mess it up. My secret add-on? Sea salt. I use a pinch of chunky sea salt and every single cookie that retains a grain of salt has this delicious salt – chocolate flavour that will knock your socks off. Oh and did I mention these cookies are the perfect Christmas present? #biscuChallenge accepted!

Ingredients
(for about 20 cookies)


a cup of flour
a cup of oats
a cup of sugar
two eggs
150g butter
a tbsp baking powder
a tsp vanilla sugar
a pinch of sea salt
a bar of chocolate

Instructions

1. Mix the flour, oats, salt and baking soda in a big bowl while you´re melting the butter.

2. Once the butter is melted (not too hot though, you don´t want to cook the eggs!), mix it with the eggs and the sugar.

3. Combine the dry ingredients with the paste and mix into a dough.

4. Chop the chocolate into really small chunks and mix in with the dough.

5. Pre-heat the oven at 175 degrees while you portion the cookie dough.

6. On large tray with baking paper, place about one teaspoon of dough some five centimeters apart (it will stretch!) and bake from 9-12 minutes (depending on how crunchy you like the cookies).

7. Enjoy with some hot chocolate!
