five/six ripe tomatoes⠀⠀⠀⠀⠀⠀⠀⠀⠀
a red onion⠀⠀⠀⠀⠀⠀⠀⠀⠀
four garlic cloves⠀⠀⠀⠀⠀⠀⠀⠀⠀
a 260g can of white beans⠀⠀⠀⠀⠀⠀⠀⠀⠀
truffle oil⠀⠀⠀⠀⠀⠀⠀⠀⠀

salt, pepper and oregano⠀⠀⠀⠀⠀⠀⠀⠀⠀

Instructions⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1. While pre-heating the oven at 200 degrees cut the washed tomatoes in big chunks (if you cut a tomato in four that should do it). Cut the red onion in slightly smaller chunks (eight would be ideal). Peel the garlic cloves. 2. Add the tomatoes, onion and garlic cloves to an oven proof deeper tray, drizzle with truffle oil and season with salt, pepper and oregano. Bake for 15 minutes. 3. Add the baked ingredients and the liquid they left behind to a blender and blend along with the basil leaves until smooth. 4. Add the can of beans on top of the tomatoes and blend in on high speed as well. 5. Serve with croutons or with toasted bread and optional grated parmesan on top.⠀⠀⠀⠀⠀⠀⠀⠀⠀

a large pack of Oreo cookies⠀⠀⠀⠀⠀⠀⠀⠀⠀
eight limes⠀⠀⠀⠀⠀⠀⠀⠀⠀
100g of blueberries⠀⠀⠀⠀⠀⠀⠀⠀⠀
350g of condensed milk⠀⠀⠀⠀⠀⠀⠀⠀⠀
200g of cream cheese⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Instructions⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1. Start by grating the lime zest out of four of the limes, and then squeezing the juice out of all eight of them. 2. Add the cream cheese to a mixing bowl and beat well with a mixer until smooth. Add the condensed milk (making sure you got the sweetened kind), the lime juice, and lime zest and mix more, until smooth. 3. Add the blueberries to the cream and mix gently such as not to squish them, otherwise they´ll give their colour to the cream. Let cool for one hour in the fridge. 4. Once the hour is done, run the Oreo cookies through a blender and then divide the powder amongst the eight cups. A couple of teaspoons per cup should be enough. 5. Pour the cream on top of the blended Oreos and top with some more blueberries or lime/lemon slices.⠀⠀⠀⠀⠀⠀⠀⠀⠀

D might not stand for Dickensian, but what Michel Faber managed to do with this book that impressed even Neil Gaiman, is a Dickensian story full of fantasy and allegory. One morning, the letter D simply disappears from the language. Soon after, Dalmatians and dentists disappear, all to the horror of young Dhikilo, who seems to be the only one find this all utterly absurd and weird. With the help of her ancient-history teacher, and his Labrador (well mostly the Labrador, who is also a sphinx) Dhikilo embarks on a journey to another world, where weird folks live under the tyrannic rule of the Gamp. The goal: to rescue the D´s. This book felt a bit like Alice in Wonderland, but reading it now, during a global pandemic, couldn´t make me stop thinking of what´s been taken from us, and the things that disappeared from our world over night. I felt the last quarter of the book was a bit rushed, and some scenes could have been expanded upon, but I overall found the book quite fun to read! Recommended to anyone with excessive imagination and a passion for CS Lewis.⠀⠀⠀⠀⠀⠀⠀⠀⠀

1. Chop the onion finely and mince the garlic cloves, frying them in a pan with a tablespoon of olive oil until slightly golden. Season with a teaspoon of cumin, one of salt and half of one of pepper. 2. Add the finely chopped carrot and fry for five minutes, then add the finely chopped red pepper and fry for another three to five (or until they soften up). 3. Chop the tomatoes and add them to the pan along with the tomato sauce, and fry for another three minutes. Then add the peas, toss and fry for another minute. 4. Transfer the veggies to an oven proof pan and proceed to making dents in the mixture with the help of a spoon. One in the middle and five close to the margins. 5. Break the eggs and pour each egg into a dent. Season them generously with salt and pepper. 6. Slice the sausage and add it on top of the veggies and egg, baking the whole thing at 200 degrees for about five minutes, or until the eggs are done. 7. Decorate with fresh parsley or sprinkle some feta on top before serving.⠀⠀⠀⠀⠀⠀⠀⠀⠀

Or as I like to call it - a love affair between pumpkin, halloumi and sun-dried tomatoes, with the guest appearance of crushed walnuts, and of course - spaghetti. This dish is essentially autumn on a plate. And my favourite way of eating pumpkin. Speaking of which - any pumpkin recipes you love?⠀⠀⠀⠀⠀⠀⠀⠀⠀

Ingredients⠀⠀⠀⠀⠀⠀⠀⠀⠀

1. Chop the pumpkin into small bite sizes chunks. Slice the halloumi into cca. 1cm slices. 2. Season the pumpkin chunks with some salt, pepper, nutmeg and drizzle with some olive oil before tossing in a pan and frying for about 7 minutes. 3. Boil the pasta according to package instructions. 4. While the pasta is boiling, fry the halloumi cheese until golden on both sides. Note: You don´t need a special pan for this, any pan will do. 5. Chop the sun-dried tomatoes into small strips. 6. Once the pasta is done boiling, mix it with the pumpkin, the halloumi, the sun-dried tomatoes, and top it off with the crushed walnuts.⠀⠀⠀⠀⠀⠀⠀⠀⠀

In a few hours I´ll be boarding a flight to Edinburgh and as per custom, before every travel, I look for a less conventional guide to the place I am about to see. This time, I came across Robert Louis Stevenson´s Edinburgh - a 100 page "sort of Bible" to nineteenth century Edinburgh. Stevenson x-rays not just places, but also legends and myths, and Edinburgh´s people in his ten chapters, and although I found the language itself sometimes hard to digest, the speech at times more lyrical than I care to appreciate, I am quite glad I kicked off #nonfictionNovember with this one. This is only my second Stevenson book, having only read The Strange Case of Dr. Jekyll and Mr. Hyde, but I´m now in the mood to read his Treasure Island, a book I really hope to buy in Edinburgh itself this weekend. two salmon fillets⠀⠀⠀⠀⠀⠀⠀⠀⠀
100g risotto rice⠀⠀⠀⠀⠀⠀⠀⠀⠀
two mashed avocados⠀⠀⠀⠀⠀⠀⠀⠀⠀
an onion⠀⠀⠀⠀⠀⠀⠀⠀⠀
a tbsp of olive oil⠀⠀⠀⠀⠀⠀⠀⠀⠀
a tbsp of butter⠀⠀⠀⠀⠀⠀⠀⠀⠀
100 ml white wine⠀⠀⠀⠀⠀⠀⠀⠀⠀
500 ml broth⠀⠀⠀⠀⠀⠀⠀⠀⠀
two tbsp of sweet chilli sauce⠀⠀⠀⠀⠀⠀⠀⠀⠀
two tbsp lemon juice⠀⠀⠀⠀⠀⠀⠀⠀⠀
salt and pepper⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Instructions⠀⠀⠀⠀⠀⠀⠀⠀⠀

1. Marinate the salmon along with two tablespoons of sweet chilli sauce and a tablespoon of lemon juice for about one hour before you start cooking. 2. Once your salmon is about done marinating, get to the risotto. Chop the onion finely and add it to a pot along with two tbsp of olive oil. Fry until slightly golden, then add the rice and fry for two minutes, mixing continuously. 3. Add the white wine to the rice, stirring as it evaporates – this should take some two minutes tops. 4. In your pot, add enough of the broth to cover the rice, and stir as the water evaporates. 5. Add the salmon on an oven tray and bake for about 20 minutes at 220 degrees, while the risotto cooks. 6. Keep doing the same thing with the remainder of the broth, and as you add the last bit, add the butter, stirring to homogenise it and finally add the mashed avocados. 7. Season with salt, pepper & a tablespoon of lemon juice. 6. Serve the risotto with the salmon on top (I love tearing the salmon apart and mixing it with the risotto).⠀⠀⠀⠀⠀⠀⠀⠀⠀

You´ll possibly think this picture doesn´t reall

You´ll possibly think this picture doesn´t really fit the gloomy first day of November. What I´m thinking, however, is I almost messed up my feed by not having posted a decent picture of last week, as to keep to the feed´s aesthetic. And in the century of social media, can you think of a spookier horror story than messing up your feed? To me, what´s actually utterly scary is how much time we spend trying to look perfect on social media, comparing ourselves to complete strangers, putting filters and editing ourselves (hello, Tezza Vintage filter that gave me this bronze), all for the sake of engagement. I don´t exactly have a take-away or lesson from this other than: cut yourself some slack, take a few steps back, and remember that your picture was a snap second of a day that was full of beauty and magic. And that day will live in your memory for far longer than the cellulite in your picture will live in your followers´ memory. ✨⠀⠀⠀⠀⠀⠀⠀⠀⠀

a tsp sesame seeds⠀⠀⠀⠀⠀⠀⠀⠀⠀
half a tsp of turmeric⠀⠀⠀⠀⠀⠀⠀⠀⠀
a tsp of salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
half a tsp of pepper⠀⠀⠀⠀⠀⠀⠀⠀⠀

1. Mince the garlic cloves and mix them with the Greek yoghurt, turmeric, salt and pepper. 2. Spread the Greek yoghurt on two flat plates, to serve as the base for the salad. 3. Add the washed and dried cress, then the cooked lentils and finally the diced avocado. 4. Sprinkle with sesame seeds, season with a pinch or two of salt and pepper and drizzle some vinaigrette on top.⠀⠀⠀⠀⠀⠀⠀⠀⠀

Hamnet by Maggie O’Farrell⠀⠀⠀⠀⠀⠀⠀⠀⠀

What a wonderful surprise Hamnet ended up being! I genuinely thought it was just another one of those overhyped books that might disappoint, until I started it. A mere couple of pages in, and I was sold. Inspired by historic facts, the death of Shakespeare´s son Hamnet, but sprinkled with a little bit of magic, and wonderfully documented and researched, Hamnet tells a tragic tale, beautifully written. In terms of the story line, I was particularly impressed by how the author so elegantly managed to keep her focus away from Shakespeare and in lieu place it on Hamnet, his siblings and their mother. O´Farrell goes as far as to never actually mentioning Shakespeare by name and leaving him be as the father, husband or sun of each of the characters. And although I found this refreshing and an interesting spin, I would have probably given the book 10 stars if I would have seen more character development in his case, and maybe also his father´s - who also seemed like a fascinating character. That being said, I found the book beautifully written, the descriptions exquisite (although not for everyone´s taste I imagine), the inner dialogues of particularly Hamnet extremely touching, and the whole story raw, moving and eerily topical. Recommended if you like fiction and don´t mind a more lyrical writing style.⠀⠀⠀⠀⠀⠀⠀⠀⠀
