Prosciutto Wrapped Pears

Pears are definitely not in my top five favourite fruit, but I find myself adding to dishes over and over again – like in this drunken pear risotto or in this perfect winter salad (shhhh, it´s perfect for summer too!). And then when Pinterest gave me the idea to wrap them in prosciutto, with a bit of creamy cheese and a mango chutney topping, I felt like I died and went straight to heaven. It´s a stretch to call this an actual recipe, considering there´s no cooking involved, but I thought I´d nonetheless put it on the blog for your next brunch session.

Shaved Zucchini with Feta, Walnuts and Honey

This #homemadeMonday called for a light dish – not because of any efforts towards a summer body (all bodies are summer bodies) but because it´s Sangria season and that to me means light dishes and heavy Sangria jars. And since the farmers´ market I go to on Saturdays has been displaying an exquisite selection of zucchinis for the past few days, I thought of giving the raw zucchini a chance. Mind you, I´ve only ever tasted cooked zucchini before, but was pleasantly surprised by how the raw version tasted. I inspired myself from this recipe – changing some things like replacing the goat cheese for feta cheese, the pine nuts for walnuts, choosing amaranth microgreens for an even nutty-er flavour and coating it all with honey instead of lemon juice. The Eggs That Look Like Dumplings on Avocado Toast

I know what you´re thinking – what an odd name for a recipe. How can eggs look like dumplings and what does avo toast have to do with them? Well originally, this was of cooking eggs was supposed to yield us poached eggs. But I realised that if I let them cook just a little bit longer, and get the yolk hard boiled, the egg white ends up looking like a dumpling and it all looks gorgeous on an avocado toast, making an epic brunch menu. So this #homemadeMonday I´ll be showing you how to make eggs that look like dumplings and put them on an avo toast, with a hollandaise topping and sprinkled with chilli flakes.

Pineapple and Cottage Cheese Breakfast Toast

A recipe that might seem a bit too exotic and out of place amongst my prune and pumpkin full Instagram feed – this pineapple and cottage cheese breakfast toast does not feel very autumny, but it is de-li-ci-ous AND it doubles as a dessert. I confess I had to do quite a bit of research to understand what pairs well with pineapple, and I will definitely try some other combinations, but this one turned out quite nice so I´ll be doing it again soon enough. The recipe is one of the simplest I´ve ever posted, but then again we rarely have much time before breakfast so I am sure you´ll all appreciate the brevity implied. Adina´s Romanian Eggplant Salad

This #homamadeMonday´s #guestchefseries brings you the most Romanian food ever – eggplant salad. The way my friend Adina learned it from her mom, who learned it from her own mom. And while usual eggplant salats are quite fatty due to the mayonnaise, this one is a healthier version with egg yolk instead. Essentially, the Romanian eggplant salad is a smokey spread that we love eating on bread all year long. It might not be the first thing you think of when picturing brunch, but I feel it´s a spread that is right up there with hummus, so I catalogued it as brunch food and made it part of my #brunchseries . It´s not my favourite dish, but its cultural value to Romania is so significant that I just had to share it with you. That, and it was tons of fun having Adina teach me and Sara how to make it.

The Original Tempura

If you´re not Portuguese you might not know this, but tempura was actually born in Portugal. The Portuguese call it “peixinhos da horta” aka little fish from the garden/farm and brought it to Japan in the 16th century. There it evolved into what they today call tempura. At its origins, peixinhos da horta remains a beloved dish, usually made from deep fried green beans in a flour and egg batter. It´s one of my favourite finger foods to add to a brunch as it´s super easy to make and goes heavenly with any sauce you might have at hand. I felt it appropriate to post as this week´s #homemadeMonday as a selected dish for the #brunchseries. Here´s how I make it.

Hummus Toast with Three Toppings

Hummus is one of those magical dishes that I crave regularly and always make enough of so I can eat it for days. I can´t quite remember who taught me how to make it but i remember when I first made it for my parents. My mom was quite a fan already, but my dad was shocked at how delicious it was. He immediately asked my mom why she doesn´t make such dishes. My mom rolled her eyes as hard as she could while saying “I make it regularly and you always say you don´t want to try it.”
